Recently the winery presented its new wine Chamal, a red elaborated under the co-fermentation of Malbec and Chardonnay.

September 2019.- Inspired in the fresh style of Beaujolais wines, Doña Paula lauched its exclusive wine Chamal. Elaborated from 85% Malbec and 15% Chardonnay, Chamal is the result of the co-fermentation of both varieties, sourced from vineyards located in Luján de Cuyo, 1050 meters above sea level.

Precisely the co-fermentation is an ancient technique of blending two or more varieties prior to fermentation. Even if in the old times this was done in order to improve the must color by taking advantage of the co-pigmentation phenomenon, in this case it seeks to achieve greater complexity in the wine. Therefore, the varieties collaborate mutually in the extraction of the different components, accomplishing more expressive wines.

Chamal is a bold and complex wine, of round palate and a marked refreshing acidity. It has a purple-red color of medium intensity, with marked aromas of red fruits, violets and apple. In the palate, the Malbec brings silky and velvety tannins, while the Chardonnay adds the necessary acidity that enables a very fresh wine.

Because of its levels of alcohol and acidity, it is ideal to pair with a wide variety of meals and appetizers, mainly fish and seafood.
