This wine is pale yellow in color and has expressive aromas of white flowers, like jasmine, as well as citrus notes. In the mouth, it is fresh and mineral, with good acidity. Its complex and delicate character makes it very attractive.
At Finca Alluvia, Gualtallary (1,350 meters above sea level), Doña Paula Estate Riesling is planted on sandy soils with calcareous and alluvial stones. The Uco Valley climate presents warm days and cool nights, with an average temperature variation of 13°C. The average annual rainfall is 280 mm. These grapevines are espalier trained and drip irrigated with melt water. The yield is 10 tonnes per hectare. At Doña Paula, our vineyards have always been managed using sustainable agriculture practices.
The grapes are hand-picked during the day time, the first week of March. A very careful, protective destemming and pressing process is carried out. Fermentation takes place at low temperatures, between 12 and 15 °C (53.6 – 59 °F), in stainless steel tanks, to preserve the primary aromas.
Warm Camembert cheese and mushrooms wrapped in phyllo pastry, served with arugula salad and chestnuts in syrup. The dish has a lot of textures and flavors.
