Finca El Alto, in Ugarteche, sits at the southern part of Luján de Cuyo, at an altitude of 1,050 meters above sea level. Its soils range from sandy loam to clay loam, with variable stone content. It has a climate with warm days and cool nights, with thermal amplitude of 14ºC and annual rainfall of 250mm. The yield per hectare is 10 tons, cultivated on a trellis system and irrigated with a drip system. At Doña Paula, we have always managed our vineyards with sustainable agricultural practices.
The harvest is in early February. It is done manually – avoiding oxidation-. Cooling and gentle pressing then take place. Maceration is carried out in order transfer varietal character from the skin to the must. Alcoholic fermentation is done at low temperatures, in stainless steel tanks, to preserve the primary aromas.
